Coffee is Italy's pet beverage. Drinking coffee is a sacred daily rite, a social and cultural custom, an old tradition But where does this "vitamin of the spirit" originate from? Coffee is the seed contained in the fruit of the Coffee tree. This seed or bean is first picked, then treated in various ways. "Coffea arabica", "Coffea canephora"(better known as robusta) and "Coffea liberica" are the best known and most commonly cultivated types of tree.

Our coffee

We use coffee that is made from the "arabica" bean.
To choose the best coffee lot, samples are taken, roasted and tasted.
Selecting the right beans is important for the constant quality of a blended coffee.
The decision is made once a year at every harvest.

 

 


Roasting

Roasting is the process where the beans are toasted, always using indirect heat.
The heat is kept constant by a wood stove. To roast the beans completely without damaging them, takes between fifteen and twenty minutes.
The aromas grow and mingle perfectly. When the beans are roasted they are passed down a chute to an air-cooling tank.
The blend is then left for a few days at a constant temperature to allow it to mature slowly.
Once the beans have matured a sample is tasted using both an "espresso" machine and an infusion method.




How do you make a good cup of coffee?

A piece of advice.
Never buy coffee in large quantities. Buy small amounts, regularly.
This way, your coffee will always be freshly roasted.
Buy a good brand and avoid blends or sub-brands.
Keep the coffee in a tightly sealed jar, or even better keep it in the deep freeze.
To make a strong, aromatic cup of coffee, use an "espresso" machine, but even a normal coffee maker can make good coffee.
If coffee is used for domestic coffee makers it should not be ground too finely.
The water should be boiling hot and must filter through the coffee slowly.
Fresh water must be used always, or better still, mineral water.
Ground coffee should never boil.
Do not press the powder in the filter and put in a spoonful of coffee for every person, if you want it strong.
Coffee should be drunk hot if its taste and aroma are to be fully appreciated.
