The ability to seal the taste and smell of a vineyard in a single drop is the art that distinguishes the best distilleries.
Top quality grappa is created only from excellent grape pomace and loving distillation. There are several theories on the origin of the word "grappa", but the most likely is that it derives from the mediaeval Latin "grappulus", or grape bunch.
So what exactly is grappa?
According to Italian law, grappa is: "a spirit obtained by directly distilling grape pomace: the residue of grape vinification, with or without the stalks and pips".
It can be drunk "young" or "matured", that is to say, aged in oak barrels.
Certainly the taste and aroma of grappa grows stronger the more it "matures".
