This sauce is very similar to "amatriciana" sauce, but has a variation. We add the best Prager ham to bacon and make it slightly spicy adding red chili pepper, pepper and oregano.

Bisanzio (Byzanthium). A name connected to spice trade. In fact this is a spicy sauce which add green olives, capers and some anchovy to fresh tomato. It tastes intense and delicate at the same time. Our cooks studied a condiment which could suit perfectly pasta as well as fish-based dishes. Bizantina sauce is perfect with red snapper fillets (at Harry's we call them "Sampietro alla carlina"). This is a sauce based on tuna fish, black olives, capers and anchovies. Who likes fish will find it perfectly suitable. Has to be used quite lukewarm to prevent tuna from boiling. It is perfect to season fresh egg pasta and durum wheat pasta as well. |
