Cipriani's tomato sauces
 


Over the last 20 years, on the basis of the mistaken assumption that sauces are only used to cover the taste of food that is not fresh, condiments have almost been banned from the table. We are convinced that this is a mistake. There is a long tradition behind the preparation of sauces and this should not be lost. Sauces exist to enrich, ennoble and exalt the taste of a whole range of dishes. Pasta, for one, tastes even better when it is served with the right sauce. Chicken, red meat, fish and lobster can be prepared in a number of different ways to simple boiling or grilling and this is all thanks to the right choice of sauce. For young chefs, the sauce is a lesson in imagination, a road that leads to the art of real cooking.

Pomo d'oro

A sauce based on first-quality Cirio tomatoes. This is the secret: the choice of a well-ripe base product, sieved without adding anything else.
Excellent for seasoning 250 g. fresh egg pasta.

Sansovina

This sauce is based on fresh tomatoes and basil. The name is related to purity and elegance evoked by sculptor's masterworks.
The basic ingredients are five: tomato, basil, oil, onion and salt.
After a brief heating, the sauce is ready to be consumed.

Amatrice

This sauce is very similar to "amatriciana" sauce, but has a variation. We add the best Prager ham to bacon and make it slightly spicy adding red chili pepper, pepper and oregano.

 


Bizantina

Bisanzio (Byzanthium). A name connected to spice trade. In fact this is a spicy sauce which add green olives, capers and some anchovy to fresh tomato.
It tastes intense and delicate at the same time. Our cooks studied a condiment which could suit perfectly pasta as well as fish-based dishes.
Bizantina sauce is perfect with red snapper fillets (at Harry's we call them "Sampietro alla carlina").

Tonarda

This is a sauce based on tuna fish, black olives, capers and anchovies. Who likes fish will find it perfectly suitable. Has to be used quite lukewarm to prevent tuna from boiling. It is perfect to season fresh egg pasta and durum wheat pasta as well.
