Panettone is the most typical of Milanese cakes.
Legend has it that it was first made at the end of the nineteenth century,
but its origins are a lot older.
In Lombardy, this bread was traditionally distributed by the abbot. It
was a huge, brown mass invented by Toni the baker ("pan
de Toni", Toni's bread and hence panettone). And if the cake had
not become world famous, its name, panettone, literally big bread, would
seem to have little to do with the light, moist, fragrant sponge that
we know and love.
Traditionally, panettone is eaten at Christmas, but for a foreigner there
is every excuse to enjoy it as a sweet bun all year round. In the original
recipe, the dough was made from durum wheat flour, kneaded with yeast
and then mixed with eggs, butter, candied peel and sultanas.

The egg whites give the dough a soft color, more white than yellow.
They also keep it light, soft and spongy. We take great care over the
cooking as well. Sixty minutes in an oven that is not too hot. The crust
must be brown, but not burnt, in order to give it its characteristic
hint of amber.
Once cooked, the cakes are kept in a cool, dry place.
We produce both one kilo and half kilo panettoni. The cakes are packaged
in special card boxes , or in our special deluxe tin boxes, to conserve
the fragrance and aroma perfectly.
The aroma. This is just as important as the consistency of the cake.
Every panettone has its own aroma.
Ours is incomparable, like its taste. And the final result?
A soft, light cake that is as good as it is easy to eat.

We
have only ignored the original recipe in one place; the candied peel has
been left out. Not everyone likes this ingredient and it is often left
on the side of the plate.
Our panettone is made with soft wheat flour, eggs, sugar, butter, yeast,
egg yolks and sultanas.
We take great care over the kneading of the dough, which has to be done
lovingly if it is to reach the right consistency: not too wet and not
too dry.
